1tbsp oil
1 pound boneless skinless chicken breast cut into 1 inch sq cubes
2 cups of frozen bell pepper and onion mix
1 tsp cumin 1tsp cinnamon
3/4 tsp salt
1/2 tsp ground turmeric
1 can of petite tomatoes
1 4oz can of green chiles

heat oil in large skillet on medium
add chicken cook about 5 minutes remove from pan set aside
now stir in bell pepper and onion mix into the same pan
cook 2 min stir in the rest of the ingredients bring to a boil
then reduce the heat to medium low simmer 15 minutes
return the chicken to pan simmer 5 minutes until the chicken is cooked
serve with rice or mashed potatoes and a vegetable
