1 pound bacon
3 TB flour
1 tsp. salt
1 ½ cups sugar
½ cup water
½ cup white vinegar
1 onion
2 hard boiled eggs, chopped
sliced, cooked, peeled potatoes

Directions:
Directions:
Cut bacon into pieces. Fry in large skillet until crisp. Remove and set aside. Drain all but 3 TB of drippings. Stir in flour, blend well. Add vinegar, water and sugar. Cook and stir until bubbly and slightly thick. Add bacon, potatoes and chopped eggs.

Can do sauce earlier and refrigerate. Warm in microwave and pour over potatoes.

Another one of those recipes where you have to guess at how many potatoes. I would make the sauce and then "look at it" to see how many potatoes you think would be best. Love, Mom
