4½ cups AP Flour
1 tsp ground Cloves
3 tsp ground Ginger
2 tsp Cinnamon
2 tsp Baking Soda
½ tsp White Pepper
¼ tsp Salt
3 TBLSP Fresh Ginger Root - grated on a micrograter
MIX THE ABOVE INGREDIENTS TOGETHER, set aside in a medium bowl.

1½ cups Shortening
2 cups White Sugar
2 Lg Eggs
½ cup Black Strap Molasses

1 cup Raw Sugar
6-8 pieces Crystalized Ginger-finely chopped

Line 2 sheet pan with parchment

Mix dry ingredients including the fresh Ginger in a medium bowl- set aside.

Beat shortening in the bowl of a stand mixer (or use a hand mixer) smooth and softened - add 2 cups White Sugar and beat on medium until fluffy-scrape bowl often. Continue beating adding eggs, then molasses. Scrape bowl, then add ½ of the Flour mixture- beat until combined. Add the remaining Flour mixture by hand with a sturdy wooden spoon.

While mixture is beating mix raw sugar and Crystalized Ginger together in a medium bowl- set aside.

Turn dough into 1” balls and roll into the raw Sugar/Ginger mixture. Place on ungreased sheet pan1”or so apart, bake 12 minutes-just until light brown and puffy. (Do not over bake as it will make a hard cookie instead of a softer chewy one which is how these cookies should be) . Let stand on sheet pan for 2 minutes then move to cooling rack until till cool.
