1 1/2 lb orange roughy fillets
1 Tbsp. butter
2 onions
2 sticks celery
1 c tomatoes
2 Tbsp. lemon juice OR
4 Tbsp white wine
3 cloves garlic, crushed
1 bay leaf
salt
pepper

Directions:
Directions:
Chop onions, celery, and tomatoes and saute in butter until soft (2-3 minutes). Add lemon juice, garlic and bay leaf. Cook on medium heat for 3 minutes. Place fillets, cut into serving sized pieces, in greased baking dish and season with salt and pepper. Cover with sauce and bake at 350 for 20 minutes. Remove bay leaf before serving.
