Tobie's Potato Soup Recipe

5 large potatoes, cubed
4 slices lean bacon, diced
6 leeks sliced thin (or spring onions)
c. chopped onion
2 T. flour
4 c. beef boullion (2 per cup)
2 egg yolks, beaten
1 c. sour cream
1 T. minced parsley
1 T. chives

Saute bacon in deep saucepan for 5 min. Add leeks and onions and saute slowly. Stir in flour. Add boullion slowly, stirring constantly. Add potatoes and simmer for 1 hour. Combine egg yolks and sour cream and stir into soup. Simmer for 10 minutes, stirring constantly. Add parsley and chives. Melt butter and cook until rich and brown.

Soup is even better the next day!
