Barbecued Brisket of Beef Recipe

Ingredients: 6 lb. Fresh Beef Brisket 1 large onion, sliced 1 bay leaf 16 whole cloves 1 clove garlic, halved 2 c. ketchup ¼ c. worcestershire sauce 2 T. brown sugar 2 T. dry mustard

Directions: |
Directions:Put meat into a large saucepot and cover with water. Add onion, bay leaf, cloves, and garlic; Cover and simmer for 4 hours until tender.
Cool in liquid. Drain. Trim off excess fat and refrigerate several hours or overnight.
Cut meat across the grain into very thin slices. Place meat slices together and stand on edge in a large shallow baking pan. Pour a mixture of the remaining ingredients over the meat.
Heat in 350º over for about 40 minutes, basting with sauce in bottom of pan.
Excellent! Serve with mashed potatoes. |

Notes: This recipe is from Dan and Mildred Arnhols: "We used some of the thinner brisket not cooked with above and cooked it until tender in the broth left over before slicing. To that we added a bay leaf, tomato cut finely and old celery ribs and made a delicious soup. It was heavy with the taste of cloves, otherwise okay. Dan liked the clove taste." Mildred
