2 lb Butter
6 ea Red onion, julienne
8 ea Yellow onion, jullienne
1/2 C Garlic, minced
2 T Kosher salt
1/2 CThyme, chopped
8 ea Bay leaf
1 C Sherry wine
2 C AP Flour
2 gal beef/veal stock
Salt & Pepper to taste

Directions:
Directions:
Cook onions, bay leaf, thyme in butter until caramelized. Add garlic until it browns.
Deglaze with wine, cook until wine evaporates and onions dry up. Discard bay leaf.
Add flour and cook about 10 minutes or until your roux looks light brown.
Add beef broth while stirring to avoid lumps. Bring to a boil and then simmer for 30 minutes.
Adjust seasonings to taste.
