2 gal Water
1 1/2 C Kosher salt
1 1/2 C Sugar, granulated
1/2 C Garlic cloves
3 ea Lemon, cut in 1/2
1/4 C Black pepper, whole
2 T dried oregano
2 T Crushed red pepper
12 ea Bay leaf

Directions:

Bring to a boil. Cool down in an ice bath.
Pour over protein and let sit for no more than 24 hours.
