2 c. shelled or frozen peas (sweet or petite)
2 T. butter
2 T. minced fresh herbs (parsley, mint or basil)
Salt & Pepper

Directions:
Directions:
Place peas into a boiling pot of salted water over high heat. Cook 2-3 minutes only!

Drain peas once they turn bright green.

In a large skillet, melt butter over low heat. Add salt and pepper as well as herbs. Once butter is melted, add drained peas and stir for 2-3 minutes to coat the peas.

Remove from heat and serve ... or jazz it up with almonds, quinoa, or rice.

Green peas are not so special ... until you try these.

Cooking green peas in this two-step process takes an otherwise dull vegetable and turns it into an enjoyable side dish which may receive as many compliments as the main course!
