6 quarts ground cucumbers (about 25 or 30 cucumbers, 4½ to 5½ inches long, before seeds form, scrape out any large seeds)
12 average size onions
3 large green peppers
2 large red peppers
½ cup salt

6 cups sugar
1 T. celery seed
1 T. turmeric
1 T. mustard seed
1 quart vinegar

Directions:
Directions:
Grind (coarse) the vegetables. Add salt. Soak overnight. Wash off salt. Drain thoroughly (Squeeze if necessary). Mix sugar, celery seed, turmeric, mustard seed, and vinegar. Heat to almost boiling and add the ground vegetables. Simmer for 20 minutes in open kettle. Makes 5 quarts.
