3 c grated carrots
2 c sugar
4 eggs
3 tsp. cinnamon
1 c chopped nuts
1 1/2 c oil
1 tsp salt
2 tsp soda
2 c flour

Directions:
Directions:
Mix eggs and oil. Mix dry ingredients together and add to egg mixture. Add carrots and nuts last. Bake at 325º for an hour in a 9x13 pan. It is good with a cream cheese frosting.

Sister Freer was a lady in Quincy where I grew up. I went to Esther Lyns school class where I helped the class make this cake. We had access to very large, fat, carrots in Quincy.
