º 10 medium size russet potatoes peeled
º 1 block of cheddar cheese (yes, 1 block!)
º 16 oz. sour cream
º 2 sticks salted butter
º 1½ cups Italian bread crumbs
º 1 large yellow onion
º 2 bunches of green onions
º Salt and pepper to taste

Boil potatoes where they are cooked halfway. You don’t want to cook thoroughly as they will be mushy.
While potatoes are boiling, grate the block of cheddar cheese. Cut up yellow and green onions and saute’ in 2 sticks of butter. Yes, 2 sticks! You want to cook them well done, where they are starting to turn slightly brown.

Drain potatoes and let them cool. Once they are cool, (about 30 minutes) grate them via food processor. They should be undercooked. Then mix the potatoes, sour cream, ⅔ of the sautéed onions (you are going to leave the ⅓ for the top), cheese, 1 cup Italian bread crumbs and lastly, salt and pepper to taste. Remember, you’ll get a fair amount of salt from the cheese and butter, so don’t oversalt. I am pretty generous with the pepper. This will be messy, so best if you grab some gloves and be sure to mix well!

Transfer to casserole dish and spread evenly. Pour balance of sautéed onions on top and generously sprinkle about a ½ cup of bread crumbs.

Stick in oven at 350º for about 75 minutes. Yum! Yum!
