1 large head green cabbage (or two 10 ounce packages pre-shredded cabbage)
8 green onions, trimmed and thinly sliced
3/4 cup sliced almonds, toasted
1/2 cup sesame seeds, toasted
2 packages Chinese Ramen noodles, uncooked (discard flavor packet)
Rice Wine Vinaigrette (recipe follows)
Garnish: Green onion brushes, roasted sliced almonds


Rice Wine Vinaigrette: (Makes 1 1/2 cups)
Preparation time: 5 min
1 cup salad oil or vegetable oil
1/3 cup rice vinegar
1/4 cup granulated sugar
2 teaspoons salt
1 teaspoon pepper

Just before serving, combine cabbage, green onions, almonds, sesame seeds and Ramen noodles and toss salad with just enough dressing to moisten.


Rice Wine Vinaigrette
Mix all ingredients with a spoon or fork and toss with coleslaw

- Makes A LOT - cut in half for 4-5 servings

- I use Angel Hair (cut) coleslaw in bags in the lettuce section of the grocery store

- Rice Vinegar is found in the Chinese section of the grocery store.

- Buy sesame seeds in the Sushi are or Chinese section of the grocery store. It's much cheaper than McCormick in the spice section and the bottles are larger.
