8-10 potatoes (if using small red potatoes, double quantity)
olive oil non-stick spray
1 cup shredded cheddar/jack blend cheese
½ cup real bacon bits
1-2 clove(s) minced garlic or ¼ tsp garlic powder/salt
¼ tsp onion powder
Salt and pepper to taste

Slice potatoes to bit size pieces. Using a large pan or skillet (with lid), spray with non-stick spray then place potatoes on medium heat. Spray the potatoes with the spray so they have a thin layer on both sides. Add bacon, garlic, onion powder and a little salt and pepper. Cover potatoes and stir about every 5 min for 20 min or so. Your potatoes should start to crisp and brown. Be sure they don't get too stuck to the pan while cooking. Once your potatoes are soft turn off burner and sprinkle cheese over the top and cover for about 5 min to let melt.

Use more or less seasoning to your taste. I never measure so those are guesstimates.
