Ingredients: 1 cup sugar 1/2 cup shortening 2 eggs 3 bananas mashed 1 teaspoon vanilla 2 cups flour 1 teaspoon soda 1/2 teaspoon salt 1/2 cup chopped pecans

Directions: |
Directions:Cream shortening , and sugar. Add eggs one at a time. Add bananas and vanilla. Sift flour, soda and salt together. Add to sugar mixture. Mix together by hand and fold in nuts. Place in loaf pan sprayed with cooking spray. Bake at 350o 45 minutes to 1hour.
I double all ingredients to reduce baking and clean up time. |

Notes: Aunt Sarah was a wonderful cook. She was married to daddy's brother, Jack D. Corrie (We always called him Jackie because that's what mamaw called him). Aunt Sarah and Jackie met in Florida where he was stationed. He was a career AirForce B-52 mechanic. Aunt Sarah has a daughter LaNell who was 6 years old when her mom and Jackie married. I always thought it was so unique that we had another "La/Le" name in the family,as if God kind of instigated what was to be in her future. We always had the best time when they came to visit....especially during the holidays. We never thought about LaNell not being born a Corrie, she just was one automatically. She was our cousin from the first time she enter our house to this day. LaNell now lives with her beautiful family in the Denver area.
