Ingredients: 1 stick butter Filling: 2 regular size cans or 1 large sliced peaches in heavy syrup 1/2 cup sugar 1 tablespoon self-rising flour Crust: 1 1/2 cup sugar 1 1/2 cup self-rising flour 1 1/2 cup milk 1/2 teaspoon baking soda

Directions:Preheat oven to 400º. Melt butter in 9x13x2 dish and set aside. On stove heat filling ingredients until bubbly and thick. Combine crust ingredients well with whisk. Pour crust into pan with melted butter. Pour filling into middle of crust in pan. The crust will rise through the peaches. Bake for 30 minutes or until crust is golden brown. Great served with vanilla ice cream. |

Notes: While I was growing up, Grandma Mills would make cobblers a lot and she was the best at rolled, latticed crusts which I never mastered. Nana never had time for that and found this recipe that is much easier and a lot less mess. I tried to make it once with Splenda for Carter, but it was awful! This is Poppa Paul's favorite dessert and he regularly asks for it for his birthday on October 10th.
