1 medium eggplant, diced
3 medium onions, diced
¼ c. butter
1 c. milk
1 c. grated cheese
3 eggs, beaten
¼ lb. crackers, crushed
1 tsp. baking powder

Directions:
Directions:
Preheat oven to 350º. Peel Eggplant and dice. Boil eggplant and onions in water with salt. Drain well; add butter and grated cheese. Then add the following; eggs, crushed crackers, and baking powder. Pour this over the eggplant mixture and mix. Pour in a greased casserole dish and bake 1 hour.
