1 onion
5 garlic cloves, minced
1 carrot
1/2 celery stalk
2 red bell peppers
1/4 pound mushrooms (porcini)
3 ounces olive oil
1/4 pound prosciutto, diced
1/4 pound ground Italian sausage
1/4 pound ground lean beef
6 ounces red wine
2 ounces tomato paste
16 ounces canned plum tomatoes, hand crushed
1 teaspoon oregano
3 teaspoons kosher salt
ground black pepper to taste

Directions:

Chop all vegetables into small to medium pieces and set aside.

Place a large stock pot or sauce pan over medium to high heat.

Pour in olive oil, and start to caramelize meats. Add vegetables and sweat until translucent. Pour in red wine and reduce by three-fourths. Add in tomato paste, hand-crushed tomatoes, oregano, salt, and pepper. Stir well and and lower heat to low temperature, and simmer covered for about an hour and a half, stirring every 10 minutes.
