2-1/2 tsp. baking soda
1 c. boiling water

2 c. pitted & chopped dates
2 c. oatmeal
1-1/2 c. wheat bran
2 c. buttermilk

1/4 c. extra virgin olive oil
1/4 c. canola oil
1 c. sugar
2 eggs
2-1/2 c. all purpose flour
1 tsp. salt

Stir baking soda into boiling water & allow to cool.
In a large mixing bowl - I used bowl of stand mixer - toss chopped dates with oatmeal & bran. Add buttermilk; stir to moisten & allow mixture to stand one hour.
In a large mixing bowl, beat sugar with oils until well mixed (I used a whisk). Add eggs & beat until lightened. Stir in cooled water with baking soda.
Toss flour with salt & add to sugar mixture - stir until well blended.
Add to bran mixture - this is when I used the paddle of the stand mixer on low to combine. Do not over-mix, or the muffins will be too dense & heavy.
Line muffin tins with paper liners (too hard to get out if you don't....trust me). My muffin pan size took 1/3 cup of batter for a nice size muffin. Original recipe called for 1/2 cup batter in each. Bake in a 400º F oven for 18-25 minutes, depending on the size of your muffin, or until a toothpick inserted into the centre comes out clean.
