3 eggs
¾ c. flour
¾ c. milk
½ stick butter

Top with:
Lemon – cut into squeezable wedges
Powdered Sugar – in a small bowel with spoon

Preheat oven to 350º.
1. Put a heavy, oven-ready, non-stick skillet (I use a cast iron skillet) with the butter, into the center of the heating oven.
2. In blender(all at about medium speed):
a. Added eggs and blend
b. With blender running add half of flower and then drizzle in half of milk
c. With blender running add the rest of flower and milk
3. When butter is completely melted and hot (not burned!) – give your mixture one more blend in the blender and then pour directly into the middle of your butter filled skillet. This will be heavy and hot so be careful!
4. Place back into center of over and cook for about 40 to 50 minute

Turn on the light, don’t open the oven, but wake the kids and phone the neighbors to watch your pancake grow and grow like some kind of alien blob in your oven.

When it’s toasty brown on the top, pull out of oven (it’s still heavy and even hotter by now!). You can divide in the pan or on a cutting board. Add lemon and sprinkle a little powdered sugar and enjoy!

This takes a while to bake but it's easy to put together and really fun to see the ingredients transform behind the oven glass. And it tastes great!
