Marinade:
1 handful chopped parsley
1 tablespoon cayenne pepper
1 tablespoon oregano
3 garlic cloves, minced
1 tablespoon chili powder
1/2 cup cooking oil
1/4 cup wine vinegar
1 pound top round steak
For the vegetables:
3 potatoes, cut into chunks
1 onion, sliced
To serve:
1 tomato, cut into chunks
1 onion, sliced
Chopped parsley
Aioli

Directions:
Directions:
Mix all ingredients for marinade and place them in a bag. Add meat and massage bag to ensure meat is covered. Allow to marinate overnight.
Preheat oven to 300 degrees.
In a grill pan over medium heat, add some olive oil. Add the meat and cook on both sides to brown.
In a baking dish, add the potatoes and onions. Place meat on top and drizzle with remaining marinade. Cover the dish with foil and bake for 3 hours. Turn off the oven and let sit for 15 minutes.
On a serving plate, add a mound of cooked potatoes and onions, followed by pieces of the meat. Top with sliced onions, tomato wedges, parsley and aioli.

I saw this on a facebook feed and it looked amazing. I had some flank steak in the freezer, and it turned out really well. It was really tender. But, the spice was a little warm for me, so I would recommend subbing the cayenne pepper with smoked paprika, and the chili powder for Tony's cajun seasoning. The veggies were good, but it would also be easy to make this with cauliflower or turnips instead of potatoes.
