Ingredients: 1 package of egg roll wrappers Small bowl of water 1 lb. Italian sausage (you can use hamburger or any other type of meat you would like, just make sure it is ground.) (I have put in mini pepperoni slices a few times. But don't ground those!) 1- 16 oz. cheese (any type you like). I use a mix of Italian blends or colby/jack 1 C to 1 1/2 C spaghetti sauce. (Again use whatever you like. I use Hints can and doctor it up with spices) (Any pizza toppings can be used in this mix - veggies and meats - just be sure to mix well into mixture. Oil for frying

Directions:Cook the sausage and drain off juices and grease. Open egg roll wrappers and put them on a plate in a diamond fashion. Put sausage into a bowl along with remaining ingredients and mix. Add spices to flavor to your heart's content. With a good size spoon full of mixture,place on lower middle corner center. Pull bottom corner up over mixture roll once, then tuck left side and right side over and make a fold. Continue wrapping and use water to moisten edge of wrapper to seal.

Notes: A dear friend of ours had us over when we got re-stationed back to WA for a bbq. She was in the kitchen when I asked if I could help with anything. She said, "Yes, you know how to ROLL? Right?" I said it depends on what you mean by roll. She laughed and said egg rolls. I said "Oh, yes I do." So I am thinking I am going to be rolling traditional Chinese egg rolls. I was so wrong. These egg rolls are gone quicker in a blink of an eye with kids and husbands alike. This is one of my family's favorite appetizers. ENJOY! Just as good as leftovers right from the fridge cold. These can be made ahead off time and frozen on a cookie sheet and fried when needed. I have made them with wonton wrappers for poppers.
