quinoa

Rinse the quinoa by placing in a fine mesh strainer. Rinse thoroughly with cool water for about 2 min. This helps to get rid of the bitter taste.
Toast the quinoa in a saucepan (optional). Heat a drizzle of olive oil in the pan over medium low heat. add the quinoa. Cool, stirring for about 1 min to let the water evaporate and toast the quinoa.
For every 1 cup of quinoa in the pot and add 2 cups of water. Its always a 1:2 ratio. Add salt and bring to a rolling boil.
Lower heat to lowest setting, and cook, covered for 15 min
Let stand, covered, for 5 min off the heat
Fluff with a fork and serve.
