1 chicken (3 to 5 lbs)
1 pkg. spaghetti (1 lb)
1/4 c. margarine
1 c. thinly sliced celery
1 bell pepper (chopped)
1 onion (large, chopped)
1 clove garlic
1 can sliced mushrooms
1 can cream of mushroom soup
1 can cream of chicken soup
1 jar pimento (chopped, small)
2 c. grated American Cheese

Directions:

1. Cook chicken in salted and seasoned water until tender. Debone. Save the water. Cut chicken into bite size pieces.
2. Cook spaghetti ( using water from chicken) according to directions on package.
3. Melt margarine in large frying pan and saute celery, bell pepper, onion and garlic but do not brown.
4. Add both soups and 1 can of water or chicken broth. Add chicken and simmer 10 minutes. Add pimentos and mushrooms.
5. Put half of the spaghetti in buttered casserole. Pour half of the chicken mixture over the spaghetti. Top with half of the grated cheese. Repeat. Garnish with sliced, ripe olives, if desired.
6. Bake at 350 degrees for 15 to 20 minutes - until bubbly and cheese is melted.
