2 c. Short grain Japanese rice
1/4 c. Sake vinegar or white wine vinegar
1/4 c. Rice vinegar
1/4 c. Sugar
2 T salt

Rinse 5 times. Drain and let dry 15 min.
Cook in rice cooker.
Small sauce pan combine vinegars, sugar and salt and warm over mod heat, stir to dissolve sugar. Transfer rice to lg bowl. Sprinkle 1/2 c. Seasoned vinegar all over the rice: drizzle onto a spatula while waving the spatula back and forth. Using slicing motion with spatula, gently separate rice grains while mix in seasoning. Fan rice while mixing to help it dry. Wipe down any stray grains from sides. Cover with damp towel to keep warm.
