2 lbs Frozen, Shredded Hash Browns
2 cups Shredded Cheddar Cheese
6 large Eggs
3 Tbsp Water
1 small Onion, diced
1 med Green Pepper, diced
6 strips Bacon, fried and crumbled or equivalent in Real Bacon Bits

Directions:
Directions:
Preheat oven to 350.

Beat eggs with water. Mix this with hash browns, onion, green pepper, pkg of cheese and 4 strips of bacon in a large mixing bowl. Spray a 9"x13" baking pan with Pam. Pour mixture into pan and bake for 40 minutes. Remove from oven and top with remaining cheese and bacon. Return to oven and bake for an additional 10 minutes.

This recipe also works well with several variations including: Substituting sausage for bacon, using a different kind of cheese, adding red bell peppers, tomatoes, or whatever you like in an omelet. You can also top with sour cream and salsa. Be creative!!
