˝lb Irish Bacon

2 C Chicken Broth or 1C Broth/ 1C White Wine

1/2 C Onion chopped

1/2 C Celery chopped

2 cloves garlic minced

2 large Red skin potatoes cubed

1 15oz can diced tomatoes

2C thinly sliced dark Savoy Cabbage

S & P to taste

Directions:
1. Fry Bacon in large pot. Drain most of the grease. Set Bacon aside once it cools dice.

2. Sauté onions, celery and garlic in remaining bacon grease for about 5 mins until onions are opaque.

3. Add chicken stock, wine, tomatoes and potatoes bring to a boil then simmer for 20 mins, or until potatoes are tender.

4. Stir in cabbage and bacon 5 mins before serving.
