2 packages of Ajiaco soup seasoning
1 package mashed potatoes
Canned white potatoes, sliced
2 boxes Low sodium organic chicken broth
Equal parts Water
Cube of chicken bullion if needed
1-2 Rotisserie chicken (shredded)
Corn on the cob, cut into small 2-3” pieces, steamed
Avocado
Cream
Capers (the big ones)
Hot sauce
Guascas (you can find this on amazon)
Scallions

Directions:
In a large pot, add ajiaco seasoning, chicken broth and water (in equal parts), sliced potatoes, some of the shredded chicken (keep some aside), bring to boil. Turn down heat and simmer until heated through, add mashed potatoes to thicken the soup, add the corn on the cob, guascas and simmer until hot.

Prepare the toppings in small individual bowls. Remaining shredded chicken, capers, sliced avocado, scallions, cream, hot sauce. Serve the soup in bowls and let people add their favorite toppings.

Empanadas pair perfectly with the soup!
