3 cups cold water
2 tablespoons sugar
1 package yeast
1 cup flour

Sponge (set in morning)
Mix water, sugar, yeast
Sprinkle 1 cup flour over it. Let sponge sit 4-6 hours at room temperature.
 

Buns


Ingredients:

⅔ cup white sugar
½ cup shortening
1 tablespoon salt
2 eggs
8 cups flour

Directions:
Directions:
In mid afternoon (2:30 pm) mix together ⅔ cup sugar, melted shortening, salt and two beaten eggs. Add to the yeast sponge and beat together. Add 8 cups of flour and knead well until elastic. Let rise till double in size.This takes till about 6:00 pm.
Punch down and let rise again. It will now be sometime in the evening and the dough is now ready to be punched down one last time and to be divided and made into buns. Let rise overnight.
In the morning bake at 400º F for 15-20 minutes. Glaze with a mix of sugar and water when they come out of oven.

The original recipe said to place the buns when they were formed in an 8 by 8 inch greased cake pan. However you can just put them on a baking sheet or in muffin pans. For less sweet buns omit the sugar wash.
