1pound carrots washed and peeled
Mayonnaise
Raisins
salt and sugar to taste

Directions:
Directions:
Grate the carrots in a food processor or on a box grater. Place in a bowl. Add raisins (about 1/4 the volume of the carrots. Moisten the mixture with mayonnaise and add 2-3 tsp of sugar to taste along with the salt to taste. Cover and put in refrigerator for an hour to allow the raisins to plump slightly prior to serving. Just a note- the carrots will release some of its juices so the salad will get juicier as it sits.
