Ingredients:  
1 avocado and 3 small cucumbers
lemon salt to taste
2 cloves minced garlic
1/2 finely cut onion
3 cherry tomatoes
1/2 cup boiled rice (optional)
1 teaspoon olive oil

Directions:
Directions:
1. Peel avocado and add lemon salt.
2. Mash until creamy adding garlic, onion, tomato and boiled rice
3. Peel and slice the cucumbers lengthwise into 1/2 inch thick and keep it aside
4. Take 1 teaspoon of guacamole mix and place it at the end of the cucumber slice and roll it tightly
5. Hole it with a toothpick and serve cold on a platter.
