6 red and orange bell peppers
1 cup mashed potatoes
1 cup boiled sweet corn or frozen and thawed
1 finely cut onion
2 cloves of crushed garlic
1 teaspoon garam masala
salt and chilli powder to taste
a few sprigs of finely cut coriander

Directions:
Directions:
1. Preheat oven to 350 degrees
2. Mix all the above ingredients except the whole peppers
3. Slice the tops and remove the seeds
4. Gently stuff the peppers with the mixture and replace the tops
5. Place them in a tray facing upwards and sprinkle some olive oil on each of them
6. Bake for 30 minutes or until it becomes tender
