3 large or 5 small green or red peppers
1 cups vinegar, divided
6 cups sugar
3 Tablespoons red pepper flakes or 1 hot red pepper, chopped
1 box Certo (2 packets)
4-5 drops of red or green food coloring

Directions:
Directions:
Remove seeds from peppers and cut into chunks. Chop in blender or food processor with cup vinegar. In large saucepan, combine 1 cup vinegar, sugar, red pepper flakes or red pepper. Add chopped pepper mixture from blender/food processor. Bring to a boil. Add Certo and boil for 1 minute. Remove from heat. Skim foam off top. If using pepper flakes, drain to remove if desired. Add food coloring and pour immediately into sterilized half-pint jelly jars and seal.
