º 1½ cups Uncle Ben’s Original white rice
º 2 quarts (8 cups) milk
º 1 2” piece - cinnamon stick
º Peel of half lime or lemon
º 1½ cups sugar
º Powdered cinnamon

Directions:
Directions:
Wash rice thoroughly. Combine rice with 3 cups water and bring to a boil. Reduce heat, cover, and simmer until rice is cooked. When the water is absorbed, add milk, a cup at a time, stirring constantly. Add cinnamon stick and peel. When all the milk is absorbed and the mixture is creamy, add the sugar. This will take a while. Cook for another 5 to 7 minutes.

Note: If the sugar is added too early the rice will harden.

Serve pudding in glass bowls, eat warm or chilled, and sprinkle with powdered cinnamon.
