1-2 lb pork tenderloin
mushrooms, assorted, sliced
pork rub mix (cumin,smoked paprika, garlic salt and pepper)
1 sweet onion, sliced
spinach
hoisin sauce
Thai red chili sauce

Directions:
Directions:
1. slice the pork
2. Rub pork seasoning over each slice
3. cube the pork
4. spray skillet with oil
5. saute the pork till done
6. remove the pork with a slotted spoon and reserve
7. add butter to the skillet
8. saute the onions,
9. add the mushrooms and spinach.
10. add the hoisin and thai red chile sauce.
11. saute for 5 minutes
12. add the pork
13. in a small container add some of the juice and 1 T cornstarch, whisk til smooth
14. add to the mixture, whisk til thickened.
15. serve over mashed potatoes.
