Italian Florentine Chicken Soup Recipe

Green Onions, chopped
˝ C chopped onion
1˝ Cups shredded carrots
1 chopped pepper
2 tsp olive oil
4 Cups chicken stock or broth
1 Cup white wine
1 box frozen chopped spinach
1 can diced tomatoes w/ peppers & onions
dried thyme
dried basil
2 Cups cubed cooked chicken breast
˝ Cup uncooked orzo pasta (or small pasta)
Parmesan cheese
Fresh Parsley

1. Dutch oven/Soup pot: Sauté onion, carrots, and green peppers in olive oil till vegetables are soft.
2. Add chicken stock and wine. Bring to a boil.
3. Add the tomatoes, spinach, salt, pepper, thyme and basil.
4. Reduce heat, cover and simmer for 15 minutes
5. Stir in chicken and orzo.
6. Cover and cook for 20 minutes or until orzo is tender.
7. Stir in cheese and parsley.
