º 2 T. olive oil
º 4 - 6 cloves garlic, minced
º 1 (2 lbs.) boneless pork loin roast
º ½ tsp. cayenne pepper to taste
º 2 (14.5 oz.) cans enchilada sauce, green
º 2 (15.5 oz.) cans whit hominy, drained
º 1 white onion, sliced
º ½ cup green chiles, diced
º 2 tsp. dried oregano, chopped
º ¼ cup cilantro
º ⅓ cup lime juice

Directions:

Heat olive oil in a skillet over high heat. Add the pork, cooking and stirring just until the meat is browned on all sides, about 5 - 8 minutes.

Place meat in a 4 quart slow cooker. Pour the enchilada sauce over the meat. Top with hominy, onion, chiles, garlic, cayenne pepper, and oregano. Pour in enough water to fill the slow cooker. Cover and cook on HIGH for 6 - 7 hours.

Stir in the cilantro, lime juice and salt. Cook on LOW for 30 minutes more. Serve with crackers or tortillas.
