º 3 beaten eggs
º 1 cup vegetable cooking oil
º 2 cups brown sugar
º 3 cups grated zucchini, packed
º 3 tsp. vanilla
º ¼ cup heavy cream
º 1 tsp. soda
º 1 tsp. salt
º ½ tsp. baking powder
º 1 - 3 tsp. powdered cinnamon (to taste)
º ¾ tsp. nutmeg

Directions:

Combine all ingredients and mix well to a creamy texture. Bake at 350º F for about one hour in 2 loaf pans. Check at 50 minutes with toothpick. Cool on rack for easier cutting.
