Andouille Sausage (can use bacon or other favorite sausage)
1 Vidalia onion, chopped
5 stalks celery, chopped
3 gloves garlic, minced
1 cup long grained rice
2 cups (16 oz) heirloom fresh black-eyed peas
2 cups black eyed peas
5 cups water water or chicken stock (add more water if needed)

Slice or dice sausage. In large frying pan, brown sausage and cook onion and celery until the onion is transparent.

In soup pot, place sausage, onion and celery along with the rest of the ingredients and bring the mixture to a boil. Add flavorings, e.g., salt and pepper, a bit of red pepper. Once soup is boiling, turn to simmer. Place a cover and cook at least an hour.

In the south, black eyed peas eaten on New Year's Day are supposed to bring good luck for the New Year. For me, this recipe makes them enjoyable to eat.
