Cupcakes:
1½ c. flour
1 c. sugar
¼ c. cocoa
1 tsp. baking soda
½ tsp. salt
1 c. water
½ c. oil
1 tsp. vinegar
1 tsp. vanilla

Filling:
8 oz. cream cheese
1 egg
⅓ c. sugar
⅛ tsp salt
1 bag (12 oz.) chocolate chips

Directions:

Preheat oven to 350º. In large bowl, blend together flour, sugar, cocoa, baking soda and salt. Add water, oil, vinegar and vanilla and mix well.

In smaller bowl, beat together cream cheese, egg, sugar, and salt. Add chocolate chips.

Place paper liners in miniature cupcake tins. Fill ½ full with chocolate batter, then add 1 tsp. filling on top.

Bake for 18-20 minutes. (Use bottom rack.)

Makes 4 cupcakes. (These freeze well.)

I got this recipe from a woman who worked for me at the china department at Woodies. These are Tony's favorite Christmas cookie. And, all the grandkids love these!
