4Tbsp cooking oil (divided)
4lbs boneless pork, cut into 3/4" cubes
1/4c all-purpose flour
1 can chopped green chilies
3 garlic cloves, minced
1/2c chopped fresh cilantro or parsley
1/2tsp ground cumin
1/4tsp salt
1/4tsp pepper
1/2-1c salsa
1 can chicken broth

Directions:
In a crock pot, heat 1 tablespoon oil over medium high heat. Add 1 pound of pork; cook and stir until lightly browned. Remote and set aside. Repeat with remaining meat, adding more oil as needed. Return all of the meat to crock pot. Sprinkle flour over meat; mix well. Add chilies, garlic, cumin, salt, pepper, cilantro or parsley, salsa and chicken broth. Cover and simmer until pork is tender and chilies reach desired consistency, about 1 1/2 hours. Serve with warmed tortillas. (You can also just put this together in the morning and let it cook on low heat all day for your dinner).
