Ingredients: Shrimp 16/20 count Cooked Peeled & Cleaned 15 ea Old Bay Seasoning 1 c Boiling Water 1 qt
Micro Greens 5 c Avocados 3 ea Cucumber (Sliced 1/8'' round) 2 ea Roma Tomatoes (Sliced 1/8'' round) 3 ea Fetta Cheese 1/2 c
Dill Vinaigrette: 2 Tbsp White Balsamic 1/4 c Egg Yolk 2 ea Kosher Salt 2 tsp Black Pepper 1 tsp Honey 2 tsp Fresh Dill 1 Tbsp Extra Virgin Olive Oil

Directions:Dill Vinaigrette: 1. Combine first five ingredients in blender on medium high speed. Slowly drizzle in olive oil 'till thickened. Remove from blender and chill immediately.
Salad: 1. Bring water to a rolling boil and add Old Bay and shrimp and cook 2 minute. Shock in ice water bath, peel and clean shrimp. 2. Arrange 8 cucumber slices and alternate with 8 tomato slices around the outside rim of a chilled salad bowl. 3. Place micro greens in the center of the bowl and top with fanned out avocado slices and cooked shrimp. 4.. Top with Feta cheese crumbles, chilled dressing and serve. |

Notes: Tis is one of the favorites at The Old American Grille. We use locally grown micro greens at their peak of freshness. Crisp cucumbers,vine ripe tomatoes, fresh Gulf shrimp and sliced ripe Hass avocados.
