1.5 lbs Stew beef, cubes
1.5 lbs Chicken breast cubed
4 Green peppers
2 Yellow peppers
2 Orange peppers
2 Sweet onions
1 Garlic bulb chopped - use as many cloves as you like - At least half if not the whole thing
2 14 oz cans regular size black beans
2 14 oz cans red kidney beans
2 14 oz cans white beans
2 14 oz cans garbanzo beans
3 28 oz cans crushed tomato
3 28 oz cans small diced tomato
2 28 oz can pureed tomato
1 14 oz can tomato paste
1 2 2.8 oz jars of Chili powder
Salt and pepper to taste

Take a large pot big enough for all the ingredients and put some olive oil in it to coat the bottom.
Throw in the meat and the garlic to sear the meat. Add about half a jar of chili powder and stir to catch all sides best you can.

Once seared for the most part add the chopped and diced veggies, onions first stir wait 5 minutes and add the rest along with salt and pepper.

Stir and let cook covered for about 10 minutes hear the sizzle. Add another half jar chili powder and stir.

Add the canned tomatoes - But not the tomato paste that is at the end only if you think it needs to be thickened.

Stir and bring to a gentle boil while getting to the boil you need to stir from the bottom to prevent burning. Oh and don't forget to cover it unless you want nice red spots all over the kitchen.

Reduce to simmer and cook covered for about 30 minutes.

Drain the cans and add the beans,

Don't forget to keep stirring from the bottom up.

Add another half a jar of chili powder and salt and pepper as needed.

Keep simmering another 30 minutes with regular stirring and voila.

Serve if you like with grated extra sharp cheddar and a dollop of high fat sour cream. None of that low-fat stuff

Not to brag but why not. This Chili has won a chili cook off at May Memorial Baptist Church. Just saying, but don't tell anyone Nancy did some pretty heavy campaigning. Stuffing the ballot box so to speak.
