Notes: A quick history lesson: many of the Franz dishes came about as a matter of necessity. Daddy was laid off from Delco and selling eggs and shoes door to door. He frequently worked both in the factory and other jobs. Over the holidays he worked as the "Jolly Fat Man" at his cousin's variety store.
Other reasons for the dishes were that you couldn't eat any meat during Lent except on Sunday's. Mom didn't eat fish except tuna from a can, salmon patties or fish sticks. She didn't eat and fowl. We had chicken about two times a month and it was fried - the only way she knew how to fix it. Everyone knows that to grill, broil or fry anything a la Clara means "burn it."
Momma could stretch anything. This is how lettuce got into the tuna salad. There might not be much meat on the table but there were lots of potatoes, salad and veggies. We didn't have too much variety of veggies though probably because Dad may not have liked too many varieties. I only remember green beans (ugh!) and corn most of the time. Some of her dishes just evolved - like Potato Soup. Then when it wasn't Lent, if she had hot dogs and there weren't enough for everyone, she would slice them into the soup and we would all get some. This eventually changed to slices of smoked sausages or Kielbasa. After I was married, I started adding cheese sometimes and Mom liked that. I also like ham in it.
