1 lb Red or Yukon Gold Potatoes
3 Tbsp Butter
1/4 cup Milk
2-4 Cloves Roasted Garlic
Salt and Pepper to taste

Directions:
To really get their flavor, these potatoes need to be baked and not boiled, but boiling works too. This is also a great time to roast the garlic. Coat the garlic with olive oil before you roast it. Bake the potatoes for 20-30 minutes at 350º.

Remove potatoes from oven and allow them to cool. You can leave the peelings on or off. Chop potatoes, add butter and milk. Mix with an electric mixer. Add garlic, salt and pepper to taste.

You will want to heat the potatoes to warm them before serving.


If using a pressure cooker, place diced potatoes (with skins or without) into the pressure cooker with 1 cup of chicken stock. Pressure cook on high for 20 minutes. Release pressure and add butter, milk, garlic, salt and pepper. Use an immersion blender or regular blender to mix the potatoes and other ingredients. Serve when blended.

* I typically don't use garlic cloves and a press because I am lazy! I use the minced garlic in the jar and it tastes just fine. 1 tsp = 1 clove of garlic.
