3 cups Flour
2 Tbsp Lard (I use 1 Tbsp Crisco and 1 Tbsp Butter)
2 Eggs
Milk (enough to make thin - a couple of Tbsp.)
Salt
Pepper


Whole Chicken
Diced celery
Diced Onions
Potatoes (optional)
Chicken Broth

Roll onto a floured surface. I take about 1/3 of the dough at a time. The thinner, the better. Slice with a sharp knife or pizza cutter into 2½" squares. Drop into boiling broth, cover. Boil approximately 15 to 20 minutes. The thicker noodles take longer.

Tradition says use chicken, boil for hours with diced celery and onions. Remove chicken and cool until you can de-bone chicken and pull apart the meat. Meanwhile bring the broth back to a boil and drop in noodles, then return chicken. You can add potatoes if you'd like.

If you use a pressure cooker or chicken pieces instead of stewing the hen, use chicken broth to enhance the flavor.

Mother, hating chicken as she did, preferred to use pork. This gives a very rich flavor and soon became a family favorite. Beef can be used as well.
