1/4 onion
3 cloves garlic
2.2 lbs of green tomatos
2 chile serranos
bay leaf
1 tsp epazote (can substitute coriander)
4.2 C chicken broth
1 Lb cream cheese
3/4 C cream

Directions:
Directions:
1) Roast the garlic and onion.
2) In a pot cook the tomato with the chicken broth.
3) Add the onion and garlic, cook for 30 minutes.
4) Season with chopped epazote and salt and pepper,
5) With an immersion blender blend the cream cheese, cream and tomato with the broth. Boil for 5 min.

This is a sauce that Fernando made for us in Cozumel. It is really, really good on enchiladas, and that's what it's really for. But we had it on eggs for breakfast, leftover chicken, etc. etc. etc. Once again the weird quantities come from translating metric to America.
