2 cups granulated sugar
2 cups flour
2 tsp baking soda
1 tsp salt
3 tsp cinnamon
1 1/2 cups Wesson Oil
4 eggs beaten
3 cups grated carrots (7-8 med)

Frosting
1 stick margarine
1 box (3 1/2 cups) powdered confectioners sugar
1 - 8 oz pkg cream cheese
2 tsp vanilla
1 cup chopped pecans or walnuts if desired

In a large mixing bowl, mix dry ingredients with a wooden spoon, stir in oil, then eggs and carrots. Pour batter in to greased and floured pan or pans

2 or 3 layers bake 30-35 minutes or. 1 - 9x12x2 bake 45-50 minutes at 350 degrees or until inserted knife comes out clean

Frosting
Beat first four ingredients well and spread on cooled layer or layers. Top with nuts.
