1 1/2 cups Milk-Scalded and cooled to lukewarm
2/3 cup Sugar
2/3 cup shortening
2 eggs
2 yeast dissolved in 1/2 c lukewarm water with 2 tsp sugar
2 tsp salt
Approx 7 cups flour

Directions:
Directions:
Heat milk to scalding. Remove and add shortening, sugar, & salt. Meanwhile dissolve yeast (it will foam up). Beat eggs and add both (eggs and yeast) to cooled milk mixture. Add flour a cup at a time. Mix well (Rossi used a electric mixer at this stage). When mixture gets too thick for beater, use your hands yo mix flour, a small amount at a time. Knead dough until it feels elastic and springs back quickly (this does take quite awhile). Place in well greased bowl in fairly warm place to rise and double in size. Knead down and let rise again to double (no time frame noted by Rossi). Punch down and form rolls. Put into greased pans and let rise to about double and bake at 375 degrees for about 10 minutes.

Cinnamon Roll Option:
Use the above recipe. Cut off a piece of dough. Roll out to about 1/2" thick. Sprinkle cinnamon and sugar mixture to your liking over the dough. Add a little melted butter. (You can add raisins or nuts at this time as well). Roll up into an oblong roll. Cut pieces about 3/4" thick. Place in pan to rise. Bake at 375 degrees.
