2-3 pounds potatoes – diced into ½ inch cubes.
1 ½ cups milk
½ cup chopped yellow onions
8 ounces chopped velveeta cheese
2 cloves minced garlic
Dried chives
Salt and pepper
Fried sausage (optional)
Fried bacon (optional as a topping)
2 tablespoons butter
Cheddar cheese

Directions:
Directions:
1. Peel and boil potatoes with enough water to barely cover the top of the potatoes.
2. While potatoes are boiling, saute’ garlic and onion in 2 tablespoons of butter.
3. Saute’ onions until translucent. Add about 1 ½ to 2 cups of milk (about 1/3 of the liquid in the pot).
4. When that has cooked about 6-8 minutes, add cooked onions and garlic, chopped velvetta, salt and pepper.
5. Cook until cheese melts. Sprinkle chives and add fried bacon.
6. Optional: top each bowl with crumbled fried bacon and cheddar cheese.

Variation: To make a spicy potato soup, cook a pound of hamburger meat with salt, pepper, garlic powder, onion powder, and chili powder. This will make a taco meat mixture. After soup has cooked, instead of adding the sausage and bacon, add the spicy beef.
